Chickpea Curry Tacos

Pressed chickpea curry tacos
  • 1 Bowl Curry Chickpea Curry Sauce
  • Included Spice Mix
  • 1 can (200g–250g) Chickpeas, drained and rinsed
  • Small Flour Tortillas
  • Shredded Mozzarella or Monterey Jack
  • Thinly sliced Scallions
  • Neutral Oil
  • Lime wedges, for serving

Method

The Filling: Combine chickpeas and the Bowl Curry Chickpea Curry Sauce in a pan. Simmer for 5 minutes, then mash the chickpeas until the mixture becomes thick and spreadable.

Spice the Shell: Mix the included spice mix into 2 tbsp of oil. Brush one side of each tortilla with this spiced oil.

Assemble: Place the tortilla (spiced-side down) in a skillet. Spread the thickened chickpea filling, cook each side for 10–15 seconds, then top with cheese and scallions.

Serve: Fold in half and serve immediately with a squeeze of fresh lime.
