Ingredients
1 Bowl Curry Chickpea Curry Sauce
Included Spice Mix
1 can (200g–250g) Chickpeas, drained and rinsed
Small Flour Tortillas
Shredded Mozzarella or Monterey Jack
Thinly sliced Scallions
Neutral Oil
Lime wedges, for serving
Method
The Filling: Combine chickpeas and the Bowl Curry Chickpea Curry Sauce in a pan. Simmer for 5 minutes, then mash the chickpeas until the mixture becomes thick and spreadable.
Spice the Shell: Mix the included spice mix into 2 tbsp of oil. Brush one side of each tortilla with this spiced oil.
Assemble: Place the tortilla (spiced-side down) in a skillet. Spread the thickened chickpea filling, cook each side for 10–15 seconds, then top with cheese and scallions.
Serve: Fold in half and serve immediately with a squeeze of fresh lime.
Slightly better taste than an average jar of curry sauce, but the grainy texture made it unpleasant. Unfortunately no where near the advertised restaurant quality. Really wanted to like the 3 sauces I bought, won't be trying again.
